Chez Panisse’s Berry Cobbler

Yield 4-6 servings

The Berries:

  • 4 ½ cups blueberries or blackberries, fresh or frozen (not thawed)
  • ⅓ cup sugar
  • 1 tablespoon flour
  • ½ lemon, juiced

The Dough:

  • 1 ½ cup AP flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 6 tablespoons chilled butter, cut into 1/2 “ pieces
  • ¾ cup cold cream, plus additional for brushing the dough

Step 1:

Preheat the oven to 375 degrees.

Toss the berries with the sugar, flour and lemon juice. Pour into a 8” square baking dish.

Step 2:

Mix the flour, sugar, baking powder and salt in a medium bowl. Using a pastry cutter or fork, cut in the cold butter until it resembles coarse meal. Add the cream and mix lightly, just until the dry ingredients are moistened.

Step 3:

 Make little patties, about 1” across and ½” thick. Arrange them over the top of the berries, then brush the topping with cream. Bake until the topping is brown and the juices bubble thickly around it, about 50-60 minutes.

Step 4:

Let cool slightly. Serve warm, with ice cream.
