Green Goddess Dressing over Salad (Romaine, Little Gems)

Yield: 1 cup

  • 2 tablespoon sliced shallot
  • 2 tablespoon champagne vinegar
  • ¼ cup buttermilk
  • Salt
  • 1 ½ cup picked soft herbs (parsley, cilantro, tarragon, chives, dill, mint)
  • ½ cup extra virgin olive oil
  • Crunchy lettuce of your choice (romaine, little gems), washed and spun dry
  • Avocado, roughly diced

Step 1:

In a blender, put the diced shallot, vinegar,buttermilk, and a pinch of salt. Blend on medium-high until the shallot is broken up, add the herb leaves and blend on medium. While the blender is running, drizzle in the olive oil, stop the blender and scrape down the sides. Blend on high for 1 minute, until all the leaves are pureed. Taste the dressing with a lettuce leaf, does it need more salt, vinegar, or oil? When satisfied with the flavor, transfer to a small bowl.

Step 2:

Put the lettuce leaves and diced avocado in a large salad bowl. Season with salt and add enough dressing to thinly coat all the leaves, start with less than you think- you can always add more. Toss the salad with your hands, breaking up the avocado and massaging all of the leaves with the dressing until they are all coated. Serve at once.
