How to Cook Fresh Shelling Beans

Ingredients:

  • Fresh beans, shelled
  • 3 whole garlic cloves, peeled and lightly smashed
  • 7 sprigs of mixed herbs like oregano, thyme, basil
  • 1 dried chili pod, broken in half
  • Salt

Instructions:

  1. Put the beans in a pot, they won’t get any bigger than they already are, so choose a pot that allows at least 3 inches of space above the beans.
  2. Cover the beans by 1 ½ inches of water, drop in the garlic, herbs and start with 2 teaspoons of salt.
  3. Bring to a boil and then turn down to a medium simmer, stirring a couple of times.
  4. Taste the water, the beans will end up tasting as salty as the water, so add more salt if you feel like it.
  5. Cook for 30-45 minutes, taste the beans to make sure they are totally tender before turning off the heat, you might need to add more water to make sure they are always covered. Let them cool in their liquid.
