Pan Roasted Okra with Spices, Yogurt and Lime

Ingredients
- 1 lb tender okra, washed
- 1 tsp ground coriander seed
- 1 tsp ground cumin
- ½ tsp chili flakes
- 1 tbsp extra virgin olive oil
- salt
- 2 tbsp roughly chopped cilantro
- 2 tbsp greek yogurt
- ½ lime cut into wedges
Step 1:
Trim the ends of the stems off the okra, but do not cut into the pods, place in a large bowl, add the olive oil, coriander, cumin, chili flake, and a big pinch of salt. Stir the okra so it is all coated with the oil, salt and spices.
Step 2:
Turn on your fan above your stove, it might become a little smoky! Heat a 10” cast iron pan over high heat until smoking. You only want to cook the okra in a single layer at a time, so if your pan is smaller that 10” you may have to cook in batches. Add the okra to the pan, and shake the pan for a second, then let the okra cook without bothering it until the okra starts to take on some color, about 5 minutes. Stir the okra briefly and then leave it alone again for another 4 minutes, if it is starting to burn, turn down the heat a bit. To see if it is tender, take one out and taste it- the okra should take about 10 minutes to become tender. Once you are stoked with the okra, arrange it onto a serving plate, rain down the chopped cilantro, add the dollop of yogurt and a couple lime wedges.
