Roasted Pear and Apple Compote

Serves 4

Ingredients:

  • 3 Pears, ripe but firm, peeled, cored and cut into sixths
  • 4 Apples, preferably tart, peeled, cored and cut into sixths
  • 1 cup apple juice or white wine
  • 2 tablespoons lemon juice
  • A handful of golden raisins
  • 1 oz fresh ginger, thinly sliced
  • 2 tablespoons agave syrup or honey
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon whiskey

Step 1:

Preheat the oven to 375 degrees. Butter a baking dish large enough to accommodate all of the fruit. Put the fruit in the dish.

Step 2:

Heat the apple juice or wine in a pot with the lemon juice, raisins, ginger, spices and whiskey until it comes to a simmer, then pour it over the fruit. 

Step 3:

Bake the fruit in the oven for 1 ½ hours, stirring every 15 minutes to keep the fruit moist. The fruit should be very soft and the liquid should be almost syrupy.

Serve with yogurt and granola, or with roasted meats like chicken or pork.
