Zuckerman's Farm has been working the fertile Delta land since the 1920s, when Roscoe Zuckerman's grandfather arrived and fell in love with the rich, marshy soil formed where the Sacramento and San Joaquin rivers converge. Tucked on a Delta "island" sitting 12 to 20 feet below sea level, the farm's conditions are perfectly suited to asparagus — one of agriculture's most labor-intensive crops. Every single spear is hand-harvested, and it takes two or more years after planting before the first shoots even emerge. That patience shows up in the flavor.
