Shanghai bok choy is the smaller, more refined cousin of standard bok choy — and once you've cooked with it, it's hard to go back. Named for the city where it's long been a market staple, this variety is distinguished by its pale celadon-green stalks (versus the white of regular bok choy) and its compact, spoon-shaped leaves that stay tender all the way through. Grown organically in Northern California, ours is harvested young and small, when the flavor is at its sweetest and the texture most delicate.
The taste is mild and clean with a subtle peppery note — less assertive than full-sized bok choy, which makes it incredibly versatile. It's equally at home in a garlicky stir-fry, halved and roasted until the edges caramelize, simmered in a ginger broth, or braised simply with oyster sauce. Because the whole plant is edible and cooks evenly, there's no need to separate leaves from stems — just trim the base and go.
