The journey to producing extra virgin olive oil begins with meticulous care of the olive groves. Every detail matters from the very beginning. Harvesting takes place between October and late December, starting when the fruit is still green and continuing as the olives mature to their fully ripened black stage. Each olive is picked by hand, protecting them from the bruising and harm that machinery can cause. Upon arrival at the mill, the olives undergo immediate cleaning and washing to eliminate any impurities. They're then crushed into a paste, which gets thoroughly blended before the oil extraction process. Bariani's extra virgin olive oil is cold-pressed and left unfiltered, maintaining its authentic characteristics, then kept in temperature-regulated stainless steel containers awaiting the bottling stage.
Store in a cool, dark area away from sunlight. The Fridge is not highly recommended. The antioxidants and polyphenols (the anti-inflammatory portion) break down when exposed to heat, sunlight, and drastic weather changes. If stored correctly, it is recommended to use within 6-8 months of purchase.
Sustainability
Environmental responsibility is fully integrated into every aspect of Bariani Olive Oil. While we are proud of the results we have achieved, we recognize that there is much more to be done. We want to share our accomplishments, challenges and agenda for change, and we look forward to continuously reporting on our efforts and progress.
Our Waste Management
Our waste management system focuses on three core areas:
Recycling – cardboard, paper, aluminum, plastic, fluorescent bulb and batteries, and electronics
Creating – animal feed, energy or compost from food scraps and other organic products.
Packaging – working smarter with slimmer packaging. By working with suppliers to rethink our processes and product presentation, we’re cutting back on unnecessary waste and saving our customers money.
Our Fourth “R”
We all know the 3 “R’s” of sustainability – reduce, reuse, and recycle. At Bariani Olive Oil, there’s a fourth “R” – rethink. So much of what we do cuts across multiple categories as we try to find new ways to protect our planet. On the surface, packaging represents an opportunity to preserve precious natural resources, but the trickle-down effect runs much deeper. Even the smallest reduction lowers suppliers’ costs, enables them to ship their products more efficiently, cuts greenhouse gas emissions and saves our customers money. We work directly with our suppliers and partner with leaders in manufacturing, to drive progress in packaging reduction.
