Native to the Americas, acorn squash was among the earliest vegetables grown by indigenous peoples. They valued this variety for its exceptional storage capability and the convenience of being able to roast it whole directly in fire embers. Its distinctive acorn-like form makes it an ideal autumn ingredient. When prepared, the delicate green outer layer becomes edible, while the interior golden-orange meat offers a sweet, soft texture comparable to similar cold-weather squash varieties. A patch of orange or yellow coloring marks the spot where the squash rested on the earth during growth. Try cutting it in half and oven-baking with maple syrup or a filling of dried fruits; incorporate it into risotto; or simply prepare roasted wedges.
