Throughout North America, crimson-hued apples have long held widespread appeal, with Empire serving as an excellent representation of this preferred style. Its striking burgundy-red coloration covers a pale green base, creating a visual appeal that particularly attracts young consumers with its "pick me" appearance.

This variety offers sweetness combined with a firm, crunchy texture and pristine white interior flesh. While Empire can be kept for brief periods, optimal flavor is achieved when consumed fresh from the tree. It carries the distinctive and uncommon McIntosh character that apple guides frequently label as "vinous." The flavor might be best characterized as having subtle notes reminiscent of cantaloupe, tropical pineapple, or delicate elderflower blossoms.

Cornell University in New York developed Empire during the 1940s by crossing two iconic American varieties - Delicious and McIntosh. Both parent varieties share the distinctive glossy red appearance. Empire makes an excellent choice for packed lunches, primarily due to its resistance to bruising.
