The Knolls, Rick and Kristie, cultivate stunning Green Garlic at their Brentwood, CA farm—an 18-acre property where they raise a diverse array of fruits and vegetables throughout the Bay Area. This Green Garlic represents garlic in its spring (occasionally fall) stage, quite different from the mature, cured bulbs typically found at supermarkets year-round. Allow the plant to continue growing, and the green tops eventually wither in summer's heat once the bulbs fully develop. After being hung to cure and dry, those characteristic papery layers form around the cloves, creating protective coverings that preserve the garlic heads for as long as twelve months. However, at this earlier growth phase, every part of the plant is edible—you can chop it similarly to how you'd prepare scallions. The taste is noticeably gentler and sweeter compared to fully matured garlic bulbs.
