Garlic scapes are the curly, tapering flower stalks that grow from hardneck garlic plants. As the mildest tasting part of the garlic plant, they work more like a substitute for onion or shallot than for garlic itself, with a fresh, mellow garlic flavor and a pleasant snap once cooked. Great sliced thin into stir-fries, blended into salsa, grilled whole alongside steak or chicken, or chopped into hummus for a subtle green kick.
