Porcini have a window. Three to four weeks a year — that's it. When conditions are right, they push up through the forest floor, and then they're gone until next season. No greenhouse version, no off-season workaround. You either catch them or you don't.

Rich, earthy, and deeply savory with a meaty texture that holds up beautifully to heat — fresh porcini are in a different league from their dried counterparts. Sauté in butter with thyme, fold into risotto, or let them anchor a simple pasta. Use them soon, and use them well.
