Ramps don't wait. They push up through the forest floor in early spring — before most crops have even started — and they're gone in a matter of weeks. Far West Fungi sources these from the hardwood forests of Michigan, where the cold winters and wet springs create exactly the conditions ramps love.

The whole plant is edible: the bulb is pungent and garlicky, the leaves softer and grassy with a whisper of wild onion. Chop them into scrambled eggs, blister them in a hot pan, pickle the bulbs, or make a compound butter you'll be putting on everything.
