Tatsoi is a tender Asian green, closely related to bok choy, with glossy, spoon-shaped leaves and a flavor that's mild and mustardy with a hint of sweetness. It can be eaten raw in salads or lightly cooked and added to soups and stir-fries, and its tender texture makes baby tatsoi especially nice tossed raw into a salad mix or wilted at the last minute into a warm dish. A great stand-in anywhere you'd use baby spinach.
