Papalo is a pungent Mexican herb that's largely unknown outside of traditional cooking — a staple in the markets of Puebla and Oaxaca, used fresh the way cilantro is used everywhere else, but with a flavor that's far more assertive. It's herbal, citrusy, and slightly resinous with a sharp, almost medicinal edge. A few leaves tucked into a taco, torta, or bowl of black beans does more than a handful of cilantro. Use it sparingly until you know how you feel about it — it's a strong flavor that rewards a light hand.
