The toasting process brings out the natural sugars in the dried kernels and adds a roasted complexity that elevates cornbread, muffins, and polenta well past the ordinary. It's also excellent stirred into pancake batter, used as a crust for pan-fried fish, or cooked low and slow into a porridge with butter and honey.
