Piel de Sapo — Spanish for "toad skin" — is a large, oval heirloom melon with a thick, mottled green rind that looks almost prehistoric and pale, creamy white flesh inside that's dense, aromatic, and exceptionally sweet with a delicate honeydew-like flavor and a satisfying crunch. It's less floral and perfumed than a cantaloupe, more clean and refreshing, with a subtlety that rewards eating it simply — cold, sliced, with perhaps a little fleur de sel or a few leaves of fresh mint. It also pairs beautifully with cured meats or crumbled cotija.
