French Prune plums are small, oval European plums with deep reddish-purple skin and dense, amber flesh that’s mildly sweet with a rich, concentrated flavor that deepens considerably at full ripeness. Most people know them only as dried prunes, but fresh off the tree they’re worth seeking out — the texture is firmer and less watery than a Japanese plum, which makes them excellent for baking, where they hold their shape in tarts and cobblers and cook down into an intensely flavored filling. Also well-suited for jams, chutneys, and sauces for roasted pork or duck. California’s prune industry was built on this variety, brought from France to San Jose in 1856.
