Red Horn peppers are a classic Italian variety — long, tapered, and curved with glossy, deep red skin and thick, sweet flesh that’s completely without heat. The flavor is rich and concentrated, noticeably sweeter and more complex than a bell pepper, which makes them one of the best roasting peppers around. Run them under the broiler or directly over a flame until charred, then peel and dress with olive oil, garlic, and a little salt — they need nothing else. Also excellent stuffed with herbed ricotta, sliced raw into salads, or grilled alongside sausage.
