Damson plums are small and oval with deep blue-black skin and yellow-green flesh that's firm, tart, and intensely flavored, and their tart and tannic flavor shines when cooked. They transform into extraordinary jams, jellies, and preserves with a rich, winey complexity. Simmer them into a savory sauce for roasted lamb or duck, bake them into a clafoutis, or cook them down with sugar and a cinnamon stick into a preserve worth putting on everything. A late-season variety with an old-world character.
