Stepladder Ranch keeps 200 hives on their Central Coast property, surrounded by avocado trees, passionfruit vines, and assorted fruit trees — which makes for a very specific, very good honey. Avocado blossom honey is darker and richer than clover or wildflower, with a smooth, buttery depth and a mild, slightly savory finish that pairs exceptionally well with cheese, particularly aged or washed-rind varieties. Spread it on a cracker with a strong blue or a sharp aged gouda, drizzle it over yogurt or ricotta toast, or use it to finish a pan sauce for pork or duck.
