This European favorite, Caraflex cabbage—sometimes called "conehead" or "arrowhead" cabbage—features a distinctive pointed shape instead of the traditional round form. With its sweet flavor and crisp texture, it works beautifully in slaws and stir-fried dishes. The leaves are less densely compacted and more delicate than standard white cabbage varieties, so be sure to rinse them well before use.
