Bella Roja New Potatoes (1 lb)

These aren't storage potatoes. Bella Roja are new crop — freshly dug from Riverdog Farm's certified organic fields in California's Capay Valley, where rich creek-bottom soil and intense summer heat do something special to whatever grows there.

Red-skinned, white-fleshed, thin-skinned, and creamy. The kind of potato that needs very little done to it. Roast them with herbs, toss them into a salad while still warm, or simply boil and butter them.

Storage: because these are fresh new crop rather than a cured storage potato, keep them in the refrigerator — not the pantry — for best freshness.
