Lovage tastes like celery — but turned up. More intense, more aromatic, with a deep herbal complexity that celery never quite gets to. Every part of the plant is edible: the stems, the leaves, the seeds. Chop the leaves into salads or soups, use the hollow stems as a natural straw in a Bloody Mary, or treat it the way you would flat-leaf parsley — as a finishing herb that pulls a whole dish together.
