One of the most coveted wild mushrooms in the world, and one of the most fleeting. Morels emerge for just a few weeks each spring — when the soil warms, the lilacs bloom, and foragers who know exactly where to look start paying close attention.

Their flavor is deeply nutty and woodsy, their texture firm and satisfying in a way cultivated mushrooms simply aren't. They're hollow, honeycomb-capped, and entirely wild — nothing about them can be rushed or replicated.

Peak season runs roughly April through June depending on the region. We source them when they're at their best and not a moment later.
