Though nettles proliferate abundantly and are frequently treated as unwanted plants, they offer culinary versatility—serving well in pesto, enriching robust tomato sauces, or enhancing soups and broths. Their taste resembles spinach but carries a more pronounced earthy, nutty character.
Never consume nettles uncooked or touch them with bare skin! The plant's leaves and stalks are covered with numerous stinging hairs (trichomes) that function like tiny hypodermic needles upon contact, releasing natural irritants that produce painful reactions. To neutralize these compounds and make nettles safe for handling and consumption, they require either water soaking or heat treatment.
Nutritionally, nettles provide abundant vitamins A and C, along with significant amounts of iron, potassium, manganese, and calcium. Remarkably, when dried, nettles can contain up to 25% protein by weight—an exceptional level for leafy vegetables.
