Uncured yellow onions are harvested fresh and sold without the typical curing period, giving them a milder, sweeter flavor and a higher moisture content. Their thinner skin and juicier flesh make them especially good raw — sliced into salads, layered onto sandwiches, or pickled — though they hold up just as well sautéed, roasted, or caramelized into a sweeter, more delicate version of a classic yellow onion.
