Poblano peppers are a dark green, thick-walled Mexican chile with a mild, earthy heat and a rich, slightly smoky flavor that deepens considerably when roasted. They're the pepper behind chiles rellenos — large enough to stuff with cheese, picadillo, or a grain filling, then battered and fried or baked — but equally delicious charred, peeled, and blended into a creamy poblano sauce for pasta or chicken, sliced into rajas with crema and corn, or stirred into a pot of black bean soup.
