Epazote is a pungent Mexican herb with a flavor that's earthy, piney, and slightly medicinal — sharp and herbaceous in a way that's hard to pin down but immediately recognizable once you've cooked with it. It's most commonly added to black beans while they cook, where it tempers and deepens the flavor, but it also works well in quesadillas, tamales, and soups. An ingredient with no real substitute in Mexican cooking.
