Charentais is a small French cantaloupe developed in the Poitou-Charentes region in the 1920s, with smooth grey-green skin, fine dark ribbing, and dense, salmon-orange flesh that's exceptionally sweet and intensely aromatic — the kind of fragrance that fills a room when ripe. The flavor is more concentrated and floral than a standard American cantaloupe, with a richness that needs little accompaniment. Eat it cold and simply — halved with a little prosciutto, a few fresh mint leaves, or nothing at all. Too fragile to ship commercially, it's strictly a farmers market melon.
