Red Kuri is a Japanese winter squash — teardrop-shaped, with a smooth, vivid red-orange rind and dense, dry, pale orange flesh with a sweet, nutty flavor that genuinely resembles chestnut. "Kuri" is Japanese for chestnut, and the name earns its keep. The skin is thin enough to eat once cooked, which saves a step and adds texture. Roast it halved with butter and a little brown sugar, cube and simmer it into a silky soup, or steam and mash it as you would a sweet potato. It stores well for months, so there's no rush — but the flavor is best in the first few weeks after harvest.
