Babylonian White pomegranates are an ancient variety — originating in Mesopotamia, south of Baghdad, and celebrated in the hanging gardens of antiquity — with smooth, glossy skin that ranges from creamy white to pale pink and stays white even at full ripeness. Inside, the arils are translucent and crystalline, with a delicately sweet, low-acid flavor and juice that's completely clear and non-staining. The flavor is milder and more refined than a red pomegranate — closer to honeyed sweetness with a soft tartness — which makes the arils exceptional scattered over yogurt, salads, or grain bowls, pressed into a clear juice, or used as a garnish anywhere you want something visually striking. A rare variety with a short season.
