Colossal chestnuts are the largest chestnut variety grown in the United States, with a deep mahogany shell and dense, starchy, sweet flesh that roasts into something rich and earthy with a natural sweetness unlike any other nut. They're fundamentally different from the rest of the nut world — low in fat, high in starch, closer in texture to a cooked potato or sweet potato than a walnut or almond. Roast them over an open flame or score and oven-roast until the shells curl back, then peel while hot and eat with salt and butter. Also excellent braised with Brussels sprouts, pureed into a soup, or folded into a stuffing.
