Sea beans — also called sea asparagus or salicornia — are one of those ingredients that taste exactly like where they come from: bright, briny, and intensely saline with a satisfying crunch and a fresh, grassy finish that lingers. These slender, succulent stems grow in coastal salt marshes and tidal flats, absorbing the ocean's mineral character. Eat them raw in a salad where their natural saltiness does the dressing's job, blanch them briefly and toss with butter and lemon alongside fish or shellfish, or pickle them for a punchy, textural garnish on a charcuterie board or oyster platter. Go easy on added salt — these bring plenty of their own.
