Padrón peppers are a small, thin-skinned Spanish variety eaten whole — blistered in a very hot cast iron with olive oil and finished with flaky salt, the way they've been served in Galicia for centuries. Think shishitos, but with more body and a higher chance of heat — roughly one in ten runs spicy, which is part of the appeal. Beyond the classic preparation, they work well skewered and grilled alongside fish, folded into a tortilla española, or served as a tapa with a cold drink. A pepper that rewards simple, high-heat cooking.
