Aedan's White Miso is crafted in San Francisco using organic soybeans, sea salt, and organic rice koji, fermented for 12 months or more into a pale, silky paste with a gentle, sweet umami depth that's less salty and more delicate than red or mixed miso. It's the most versatile miso in the kitchen — whisk it into a simple soup with tofu and scallions, blend it into salad dressings or vinaigrettes, use it as a marinade base for fish, chicken, or tofu, or stir a spoonful into butter for a compound that makes roasted vegetables and pasta something else entirely.
