Hopi Pink is an ancient Southwestern heirloom corn variety with a storied history among Pueblo peoples, milled here by Tierra Vegetables into a soft, pale pink cornmeal with a delicate, subtly sweet flavor and a finer, more tender texture than their Bloody Butcher variety. It makes an exceptionally light cornbread and beautiful pink-hued pancakes, and its mild sweetness works well in cookies and muffins where you want corn flavor without the earthiness of a darker meal.
