A natural process coffee from Finca Santa Lucía, tucked in the village of Tres Pinos in Honduras's Comayagua region — over two and a half hours from the nearest city. Raul Rodriguez, a third-generation producer, inherited the farm from his father Don Ermenegildo, one of the region's early specialty coffee innovators. Planted inside Montaña de La Choca, a national cloud forest reserve, the farm sits between 1,200 and 1,550 meters, where well-defined rainy and dry seasons produce ripe cherries and ideal sun-drying conditions. Raul pays the highest worker salaries in the region and directs a portion of direct-sale profits toward rebuilding the local school. Expect cherry, milk chocolate and port wine, with a wine-like tartness and natural sweetness characteristic of a well-made natural process.
